It is too sweet for my palate though I think it will be popular with the female crowd or as served deeply chilled to those who've traveled into the later courses of the evening. Thanks guys, it's cooled down but the day has been hectic, so first a preview of the two dessert IPAs. I can tell the lactose is adding some creaminess on the mango milkshake despite its much lower FG, perhaps because of that. I did put some lactose in with it but I can’t tell it’s there because of the way berry juice thins a wine or beer body. Kmeeks, the blueberry IPA is paired with Azacca on the dry hopping.

Some soldiers awaiting their Christmas boxing: It was packed down about 1/2” thick and nice and stable. This could even go a notch juicier with a second dry hop, though I don’t think that grassy-harsh dry hop oil would be good on this smooth and crisp body, so the 8oz-for-three-day dose might be a sweet spot. It’s only 4.5%ABV and has an apparent dryness at 1.010FG, though the Nottingham Ale yeast went very clean here so the juicy hops aromatics (Mosaic and Citra) sit perfectly next to the residual sweetness from the relatively high crystal addition that follows on the sip. This should condition a lovely clear gold though, so I’ll wait to reserve judgment. I might even go with just crystal10 next round without bothering with the 15&20L additions. Well I’m part way through my mad packaging day. Seems like they look for the most inconvenient location possible to go shit the bed. I battle roaches, earwigs and centipedes here and of course we have rodents but they’ve been successfully locked away from entering the meadery. Oh and six gallons of stout waiting for glass. Tomorrow I’ve got to bottle the 12g batch of rogue wave golden ale (well five to my keg stash) and if I can I’ll hit some of the German styles in time for the holidays. In addition to that the esters are more neutral than I’d have guessed based on the ferment’s vigor.Ĭheers! Looking forward to trying these weirdos. The added residual sweetness is good with this style, so the MI5 Empire Ale gets my recommendation for its rapid ferment and moderate attenuation. Anyhow, that one dried out ten points less than the mango milkshake version, so it landed right at 6.5%. It’s still low IBU though I’ll go even milder next run as well because I’m finding that the bittering is messing up the fruit perception potential. Next time I’ll go pretty much white with the grist so that the purple coloration doesn’t get muddied but this one has promising early taste results with a nice pop of fresh berries over the IPA base. OK, got back out and bottled two cases of blueberry IPA.
